TECHNOLOGIES TO BE UNVEILED FOR THE FIRST TIME IN THE WORLD AT IBAKTECH 2026
PRODUCTION CAPACITY OF 11,000 UNITS PER HOUR, EIGHT SLICES IN FIVE SECONDS
The global food processing machinery market, valued at $64.8 billion in 2025, is expected to reach $68.3 billion in 2026 and $87.1 billion by 2030. Automation, high production capacity, energy efficiency and sustainable manufacturing solutions are driving the sector’s growth, while the latest advances in bakery, pastry and confectionery technologies will be showcased at IBAKTECH 2026. The exhibition will feature a wide range of innovations, from production lines capable of manufacturing up to 11,000 units per hour and domestically developed ultrasonic systems that can cut eight slices in five seconds to energy-saving machinery and new concepts being unveiled worldwide for the first time.
The International Bakery, Pastry Machinery, Ice Cream, Chocolate and Technologies Fair, IBAKTECH, will bring together industry professionals at the Istanbul Expo Center from October 14–17, 2026. Now in its 15th edition, the fair will showcase ice cream and gelato production technologies, chocolate and confectionery machinery, cake and cookie production systems, dough processing lines, industrial ovens, cooling systems and sustainable manufacturing solutions.
A NEW BENCHMARK IN PRODUCTION CAPACITY: 11,000 UNITS PER HOUR
The next-generation machinery on display at IBAKTECH 2026 aims to improve not only production speed but also consistent quality and operational continuity in food manufacturing. Technologies that cut dough without applying pressure, preserving its structure, can achieve production rates of up to 11,000 units per hour. Meanwhile, fully automated, servo-driven and internet-connected production lines enable remote monitoring, reduce maintenance requirements and improve workforce efficiency.
The fair will also feature technologies designed for products requiring precision cutting. Systems equipped with domestically manufactured titanium blades and ultrasonic power sources can slice firm and frozen cakes without compromising their shape. Some of these machines can cut eight slices in just five seconds.
NEW PRODUCTION MODELS FOR ICE CREAM AND GELATO
A broad range of products and technologies will be showcased in the ice cream and gelato segment, including production machines, pasteurizers, display cabinets, blast chillers, natural-ingredient premixes and specialized blends for different types of ice cream.
A new bar system that combines coffee and ice cream within a single professional retail concept will also be introduced at IBAKTECH 2026 for the first time worldwide.
Other highlights will include gelato premixes made with real fruit and natural ingredients, locally developed blends that deliver the desired consistency at lower dosages to improve product efficiency, and edible food containers designed for different applications.
TECHNOLOGIES THAT REDUCE ENERGY AND RAW MATERIAL CONSUMPTION
Alongside production capacity, IBAKTECH 2026 will highlight solutions designed to reduce energy, raw material and labor consumption. Technologies ranging from forming machines that operate without compressed air to systems that automatically manage proofing and cooling processes will help manufacturers maintain production while using fewer resources.
Lightweight designs developed for industrial baking equipment will also support energy efficiency by reducing tray weight by 30% to 50%, depending on the application. Long-lasting coating options that require less oil will further help businesses reduce resource consumption and maintenance needs.
MANUFACTURERS WANT TO PRODUCE MORE WHILE USING FEWER RESOURCES
Commenting on the transformation of food production technologies, Ufuk Altıntop, General Manager of Messe Stuttgart Turkey Fuarcılık, said:
“Competition in the food industry is no longer driven by product quality alone. Manufacturers want to achieve higher capacity while using energy, raw materials and labor more efficiently and maintaining consistent quality in every production run. This is why automation, digital monitoring systems and energy-efficient machinery are becoming central to investment decisions.
“At IBAKTECH 2026, we will bring together next-generation technologies that address these industry needs. As Eurasia’s only global trade fair dedicated to the bakery, pastry and confectionery sectors, IBAKTECH provides a platform where manufacturers and international buyers can connect.
“At our 2024 edition, we welcomed 92,482 visitors from 118 countries. This year, we aim to bring together industry stakeholders from 150 countries in Istanbul, alongside our exhibitors and visitors. In response to growing demand, we have expanded the exhibition by an additional hall, bringing it to seven halls and a total area of 80,000 square meters.
“At IBAKTECH, we will connect high-capacity systems developed through domestic engineering expertise, energy-efficient solutions and new production technologies with global markets.”
MACHINERY WILL BE PUT INTO OPERATION AT THE FAIR
IBAKTECH 2026 will be more than an exhibition of machinery; it will offer visitors the opportunity to experience equipment in action during actual production. Live demonstrations and workshops will take place over four days, featuring the production of gelato, ice cream on sticks, chocolate, cookies, simit, bread, pizza, baklava, börek and mantı.
Products prepared during these demonstrations, which will feature both Turkish and international chefs, will be available for visitors to taste.
